Meat Church Texas Sugar is a versatile Southwestern pork and poultry rub with cumin notes. It starts sweet and finishes with a subtle back-end kick, much like their popular Holy Voodoo.
Fantastic on ribs, pulled pork, chicken, turkey, seafood, smoked cream cheese, and popcorn.
Sweet but not overly so — in fact, less sugary than six of their other seasonings. The recipe comes from Matt's competition BBQ days, where it earned plenty of KCBS and IBCA wins.

Party Ribs
1 rack pork spare ribs, sliced into individual ribs
Meat Church rub of choice, to taste
1/2 stick butter, 1/3 cup light brown sugar, 3 Tbsp agave (or honey), 1/2 cup BBQ sauce
Method: Slice each rib individually and season all sides. Smoke meat side up until a rich mahogany colour and at least 170°F (about 90 minutes). Transfer to a pan with the butter, brown sugar, agave and BBQ sauce, toss to coat, cover with foil and return to the smoker until tender (around 207°F internal). Toss once more in the sauce and let cool before serving.
Pro Tip: Slicing the ribs before cooking creates more surface area for bark and seasoning.
