How to Brine Poultry
Chicken: Mix 1 cup of brine with 1/2 gallon of water, chicken stock, or broth.
Turkey: Mix the entire package with about 1 gallon of liquid, enough to fully submerse the bird.
Method: Warm the mixture in a saucepan to dissolve, then chill completely before adding your poultry. Brine in a food-safe container or brine bag — roughly 1 hour per pound, or overnight for convenience. Rinse thoroughly and pat dry before cooking.
Pro Tip: Add whole black peppercorns, citrus slices or fresh herbs to the brine to customise the flavour.
